Vegetarian Delight

Summer was made for grilling, eating outside, and devouring a plate full of fresh veggies. With our move in complete and a house full of guests it made sense to finally sit down for our first real dinner and indulge in some of summer’s last batch of treats.

Boulder has a great farmer’s market and it seemed fitting to mosey on down and pick up some last minute items. Obviously some tomatoes, peaches, green beans, fresh lettuce, and herbs would be on the menu. The best thing about cooking in the summer is how simple it can be. Slice a few tomatoes, throw some olive oil, s&p , and basil over them and you have a delicious salad. Blanch some green beans and make a quick lemon mustard vinaigrette, it’s all too easy.

Don’t get me wrong, I love a good steak, but in the summer, when the flavors are incredible, a meal that highlights vegetables can be just as good. As long as there is flavor and variety, a vegetarian dinner can be just as satisfying. And think, come February, you’re going to miss those summer nights when you could just throw something together and call it a night.
